How to Serve
Placing a brouilleur on top of the glass and filling it with iced water it is a treat to watch the louche take form. Starting with oily traces and building up to a perfectly good louche. One will need really cold water and a steady slow drip to produce a really good louche out of it but it is certainly not too thin.
Ingredients
Like all classic Absinthe recipes, it is based on the holy trinity of Absinthe: Wormwood, fennel, and green anise, but of course other mountain herbs are used in lesser quantities in both the distillation and the all-natural green coloration.
Best Pairing
Fruits such as oranges and lemons, cheeses like Gouda or Swiss, cured meats including salami and prosciutto, nuts such as almonds or walnuts pair perfectly with absinthe. A rich cheese like goat cheese works well with absinthe, and the onions accentuate the spirit’s savory herbaceousness. Omelets pair well with any absinthe cocktail that works for a brunch menu. Coconut water serves as a great mixer for absinthe cocktails.
